1 day agoI could be wrong, but I think the only cake that is guaranteed upside-up is one that you serve still in the pan you baked it in. That is more a choice of manner in which to serve the cake than a function of the sponge itself.
Upside down cake is constructed before baking in a way that is intended to be inverted from the baking orientation to serve.

These trends only last 6-7 months anyway.
